Dziugas is a hard Lithuanian cheese matured for 18 months with a unique spicy taste and distinctive aroma. The cheese's crispness is caused by precipitating calcium crystals , characteristic of the next stage of ripening. It is produced from only 4 basic ingredients: milk, salt, lactic acid bacteria cultures, coagulating enzyme. Dziugas long-ripened cheeses do not contain lactose are rich in calcium, magnesium. The taste, color, smell and texture of the cheese evolve in the process of maturation - the more mature the more crumbly, they do not contain any additives, preservatives and flavor enhancers.
